What is freeze-dried?
Freeze-dried is Latin for sublimated/ freeze-dried. Fresh product without water but with full nutritional value.
It is not boiled, not fried and not chemically treated.
Freeze-dried or lyophilisation is a process in which fresh produce is first flash frozen. Then, in a vacuum environment, the water is removed without the use of high temperatures.
This means:
• the product is not "baked" or "boiled";
• the proteins, vitamins and fats are not damaged;
• the natural texture, flavour and aroma are preserved.

How is this different from other production methods?
Thermal drying:
It is done with heat. Only 50-70% of the nutritional value remains, a significant part is lost and the taste and fat structure may change.
Smoking:
Salt or additives are often used, unwanted by-products may occur.
Extrusion (pellets, croquettes):
Very high temperatures and pressures significantly alter the natural composition of the raw materials.
Freeze-dried method keeps the product as close as possible to its natural state up to 90-97% of its nutritional value.
